Garlic Kale

garlic kaleIngredients
  • 1 large bunch Kale
  • 2 or 3 Garlic cloves
  • 1 tablespoon Crushed Red Pepper Flake
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/4 cup Chicken or Vegetable Stock
  • Salt and Pepper to taste
Directions
  1. Wash the kale and remove the leaves from the tough stalks.
  2. Coarse chop the leaves and set aside.
  3. Heat large pan on medium heat.
  4. Slice 2 to 3 garlic cloves.
  5. Drizzle the extra virgin olive oil around the pan.
  6. Add the garlic.
  7. When garlic is lightly golden brown, put in the chopped kale.
  8. Turn the kale in the pan to evenly coat with oil and garlic.
  9. Add the 1/4 cup of stock and a touch of salt and pepper.
  10. Cover the pan. Let it sit 5 to 8 minutes, turning occasionally.
  11. When the kale appears wilted down and tender, sprinkle on the crushed red pepper flakes. Stir and serve it up.
Serving Ideas
  • This dish goes nicely with chicken piccata.
